Just for a change, for breakfast we cooked up a heap of pancakes, covered them with Maple syryp and had a few rashers of crispy bacon
Now I am not sure I will live any longer with that type of diet but it sure is nice now and again

Bacon is nice, but really, patty-sausage goes better with pancakes. The syrup brings out the bite of the sausage.
And yeah, eggs over are a necessity with a pancake breakfast.

Just refresh my memory please "over easy" for the eggs, please explain, I tend to do poached or scrambled Over easy means the eggs are fried in grease on both sides and cooked enough so that the yolk is not so runny, though it usually is left more or less liquid, depending on one's taste. Sunny side up means the eggs are fried only on one side and the yolk on the side left up remains only warmed through and of liquid consistency. Scrambled eggs are also very popular here; poached eggs not so much, though some folks do like eggs fixed that way. Sausage often goes with an American breakfast as well as bacon. Country sausage is basically just fatty ground pork with a variety of spices added. I have a great recipe for making country sausage if you're interested. It's easy to make, and when fried for breakfast, is simply delicious. Another type sausage we like is often called link sausage. Those are normally made commercially here and may be purchased in just about any grocery store. They're just pork sausage enclosed in an edible casing about 2 inches long, kind of like German sausages, and then fried.

You got "sunny side up", or just "up". Fried on the bottom, so the top of the egg is snowy white white and bright yellow "sun-shiny" yoke. Yoke is extremely runny. You got over. This is when the egg is 2/3 to 3/4 done, you flip it over and finish cooking on the top, which cooks the white completely, and puts a cooked skin over the yoke. You got your "over easy", in which the yoke is just as runny as sunny-side up. You got your "over hard", where the yoke is cooked as solid as a hard-boiled egg. And you got your "over medium", for folks that don't really know what they want. Yoke consistency falls somewhere in the middle. Then you have basted. This is for people, like me, that can't flip an egg without breaking the yoke. You tilt the pan so the grease pools at the edge, and spoon hot grease over the top of the egg. This cooks the top, both the white and yoke, without risking breaking the yoke, so you still have a nice runny yoke to mix with your grits and/or hash browns. I, personally, like poached. Don't eat them often enough, though. When Mama made them, she served them sitting on a piece of toast, and I seldom have loaf bread in the house, so have no toast.

Well, I just posted and lost the entire post when the forum had me sign in again.
I am a fan of poached eggs on (buttered) toast, too. I have a cooker that makes perfect poached or hard-cooked eggs with steam. No green ring around the yolk, either. When I was growing up, the extra-special breakfast included a soft-cooked egg, expertly crafted by my mother and served in an egg cup.

Pancakes, bacon, and eggs are served in our home 2 times a year only: Thanksgiving morning and Christmas morning. ( Too fattening as a regular menu item!)
